My easy quiche recipe combines savory Italian sausage (or country ham), creamy gouda cheese, and tender potatoes for a rich and satisfying meal that’s perfect for special mornings.

Breakfast Quiche Recipe
This quiche is both easy to make and filled with flavor, thanks to the combination of seasoned sausage, creamy half-and-half, and delicious gouda cheese. Here’s how to make it:
Ingredients:
Vegetable oil
1 cup mild Italian sausage
2-3 small to medium potatoes
1 9-inch pie crust
4 large eggs
3/4 cup half-and-half
Pinch of kosher salt
1/2 teaspoon black pepper
1-1/2 cups grated aged gouda cheese
Instructions:
Preheat the oven to 350°F (175°C).
Blind Bake the Crust: Line a 9-inch pie pan with the pie crust and pierce it with a fork. If room temperature place in the freezer or fridge for 5 minutes to help it keep it’s shape during baking. Bake for 10 minutes, then let it cool while preparing other ingredients.
Cook the Sausage: In a small pan add the sausage, cooking until mostly brown and pink is gone. Set aside. Substitute: bacon, ham or regular breakfast sausage would work well.
Prep the Potatoes: Cut your potatoes in half and then into half inches slices. Cut those slices in half for pieces approach 1″. Place the potato slices in a small saucepan and mostly cover them with vegetable oil. Cover then cook over low heat approx 15 minutes until the oil just begins to bubble and the potatoes are tender but not mushy. Carefully remove the potatoes and place them on a paper towel-lined plate to drain.
Prepare the Filling: In a medium bowl, whisk together the eggs, half-and-half, salt, and pepper.
Layer the Quiche: In the baked pie crust, layer the potatoes, sausage, and 1/2 cup of the cheese. Pour the egg mixture over the top, then sprinkle the remaining cheese. You do not want the liquid to fill to the top as it will expand when cooking.
Bake: Place the quiche on the bottom rack of the oven and bake until the center just sets and the top is golden, 40 to 45 minutes. Cooking in a glass pie plate does help to see if the crust is fully cooked. If not add another few minutes and cover the top if already golden brown. Let it set for a few minutes before serving to make sure it is properly set.
